Eggy Veggie Stir Fry

Serves 1

¼ cup broccoli
¼ cup onions
¼ cup carrots
¼ cup bean sprouts
¼ water chestnuts
2 -3 eggs
2 tablespoons olive oil

Directions

Pour 2 tablespoons of olive oil into a wok/pan and place on medium heat. Place all the veggies in the wok/pan. Cook veggies for about 5 minutes or until done. Scramble 2 eggs in a bowl and then pour egg mixture in the wok/pan over the vegetables.

Stir until the eggs are done. Transfer to a plate and garnish with quinoa. Enjoy this healthful recipe!
