Serves 4-6
4 beaten eggs
1/3 cup rice flour
1 teaspoon sea salt
2 cups of grated sweet potatoes
2 tablespoons of grated onion
dash of nutmeg
optional- one small clove of crushed garlic
Directions
Combine all ingredients and mix well. Sauté both sides in butter in a heavy skillet until brown and crisp.
Garnish with lots of fresh steamed vegetables.
